My Story

After fifteen years working in the federal government, I decided to take a leap from churning out policy memos to, well, churning. This business launched in 2025 alongside my new career in writing, speaking and facilitating. You can find that part of my life on Substack and my website Slow Mindfulness, where you can learn about my speaking and facilitation work as well as my forthcoming book Sometimes You Should Be Late.

Although I had dogs most of my life, my love of animals came later. I wasn’t born vegan; it took me thirty-five years. The last five of which I gingerly moved from pescatarian to vegetarian to vegan at home to fully plant-based in 2020.

I try my best not to preach or shame people about their diets. I prefer inviting others in, honoring small shifts and openness, and letting delicious food that makes a smaller impact on this planet speak for itself.

After all, I get it: ice cream is incredible. That’s part of the reason I built Wallywich: to show that joy, indulgence, and compassion can coexist in ice cream sandwich form.

Oh and Wallywich is named after my husky-mix, Walnut. She’s a (reluctantly) vegan dog who loves peanut butter and squirrels with equal abandon. Walnut reminds me daily that animals are magical, weird, and worthy of so much our love and care.

So this little vegan ice cream sandwich pop-up is for her—and for you. Whether you’re cutting back on meat, fully plant-based, lactose intolerant, or just curious how good vegan ice cream sandwiches can be, I’m glad you’re here!
